Made entirely from Sardinian sheep’s milk, it is a short-matured cheese, about 20-24 days. The aroma of sheep’s milk has a soft texture, sweet and refined taste. The soft yellow rind has the characteristic striping of the canestrati cheeses. The cream-colored paste is soft and may have small eyes.
To be enjoyed naturally with Carasau bread, but it is also very versatile in the kitchen, lending itself both to the cut
cube and to the fusion.
